Serving the perfect Thanksgiving Day turkey can give even the best cook holiday anxiety. Each year turkey hotlines get thousands of calls from distressed cooks. If you are hosting the holiday feast this year there are ways to get your Thanksgiving Day off the stunning success. Here are some tips to create the perfect turkey dinner.

Start with the Turkey
When ordering your whole turkey, allow at least 1 pound per person. If you love leftovers add 1/2 pound per person.

Turkey Tool Box
To have the perfect turkey you will need the right tools. Here are a few things you will want to have on hand:

•Heavy duty roasting pan with rack
•Trussing string
•Aluminum Foil
•Baster
•Fat separator
•Wire whisk
•Sharpened carving set.
•Meat thermometer

Be Safe
The most important part of cooking a turkey is to practice safe turkey handling. Here are some musts for turkey preparation:

•Make sure that raw turkey or its juices do not come into contact with other foods.
•Wash your hands, utensils and surfaces the turkey touches with hot water and soap.
•Use a meat thermometer to check for the proper internal temperature.

To Stuff or Not To Stuff?
This comes down to a matter of preference but if you do stuff you will want to ensure to follow these important steps:

•Estimate about one cup of stuffing per pound of turkey.
•Add about 5 to 7 minutes per pound for a stuffed bird.
•You will need to check the temperature of the bird and the stuffing before serving. The stuffing must register at least 160°F before it is safe to eat.
•Never stuff the bird ahead of time. Stuff it just before putting in the oven.

Turkey Cooking Tips
There are lots of factors that go into creating the perfect turkey, here are some general guidelines:

•Remove the giblets before seasoning and cooking.
•Fresh turkeys must be refrigerated immediately. Frozen turkeys should be defrosted in the refrigerator for two days prior to cooking. Never thaw a turkey at room temperature.
•Brush the bird with melted butter before roasting. This will help in browning and flavor.
•Baste only at the beginning of the roasting process.
•Cook your turkey on a rack.
•Roast the bird with the breast side down for the first hour.
•Use a meat thermometer for best results. The turkey should read 165°F when it is done.
•Save the drippings for gravy.
•After cooking, cover the the turkey and allow it to rest for about 30 minutes.

“I think we all, at one time or another, have wondered what animals are thinking, but the real question is what thoughts do we project onto them. This body of work speaks through insinuation. All the animals seem to have expressions of disinterest or aloofness to pave the way for our own judgment. I don’t know whether animals have thoughts either way on the absurdity or necessity of war, but it is extremely easy to project our own fears, anxieties, or fascination onto them. ” Mark Bouthilette

Winterize your Rental!

Staying warm while saving money might sound like a contradiction, but all you have to do is "winterize" your apartment to make this concept work.

So, you've found the perfect deal on a place. For most renters, this happened during the peak moving season of June-September. But, as you have probably figured out by now, all was good with the housing section of your finances until winter started to roll around and that utility bill of yours continued to just keep creeping higher and higher.... Top it off with that holiday bill blow to your wallet, you're ready to cut back on your expenses NOW and for CHEAP.

Here's how:
-DRAFT SNAKE-

The name may sound funny, but you can laugh all the way to the bank. According to the U.S. Dept. of Energy, you waste 5-30% of energy from that cold draft you feel from your exterior doors. So, start cutting these costs right now by making a homemade draft snake. Simply roll up a towel and place it under your door. If you want to keep it classy, they sell plain or decorative draft snakes at the stores.

-WRAP IT UP-

Drafty windows are said to increase your heating bill by 30%--that's a lot of wasted money. One Illinois woman wrote about saving $150/mo with a $30 investment! So for a very reasonable price, pick up a window insulation kit at your local hardware store. No need to worry, if it’s propery installed (it’s actually very easy), it’s practically invisible.

-WEATHER STRIPPERS-

An alternative to snakes and plastic: weather stripping. If you can notice light, air, or snow making its way around your doors or windows and into your apartment, you’ve got some weather stripping to do. This is one of the easiest "fixes" out there. Just be sure to pay attention to how large the gap is between the door or window and its frame because weather stripping comes in a few different sizes. For less than $10 at a hardware store, you can pick up a box. When applying, expose the sticky side of the stripping and stick it where needed… done.

-SNUGGIE YOUR POCKETS-

Sure it’s easy to turn up the heat in your apartment, but know that every degrees you do, that's money spent out of your pocket. Keep in mind that for every degree you turn your thermostat down, you’ll save between 1-3% off your heating bill! In order to do this, you're going to have to keep warm other ways, so FYI: a light sweater is worth 2 degrees of warmth, a heavy sweater is worth 4 degrees, and a Snuggie is priceless... And one more tip, if you've got a programmable thermostat, try kicking on the heat an hour before you get up, and then let it go back down during the day while you’re at work.

-HEAT THOSE OUTLETS-

Fighting air leaks is the biggest part of saving heat energy. Most people would never consider the outlets on their exterior walls as possible air leaks, but they are definitely a contributor to heat loss. Next time you're at the hardware store don’t forget to pick up foam outlet insulation gaskets. Sounds complex, but it's really easy--simply remove the face plate for your outlets or switches, place the gasket in, and replace the face plate. Congratulations, you’re handy.

-REMOVE AC UNITS-

Having a window air conditioner still installed in the dead of winter is one of the silliest ways to waste money, and yet, you see it all winter long. There is no good reason to leave one in after fall, but if you don’t have the ability to remove your window unit, ask management or buy an insulated cover. These units are an open door to the outside...

-REGISTER CLOSED-

If you’re lucky enough to have an extra room that generally goes unused, close the heat register in that room and keep the door closed. The less space you heat, the less you spend. You can also close off entry ways by hanging fabric in doorways... may sound tacky, but I've seen some rather cute looks.

Hopefully these tips prove helpful to you this winter, especially in the face of the ongoing economic slump we’ve all found ourselves in. If you have any tips, tricks, or success stories you wish to share, please feel free to use the comments below.

We are recycling used cell phones, empty laser, fax, copier, and inkjet cartridges as well as, laptops, Palm Pilots, iPods, video games, GPS Systems, DVD’s and digital cameras for two reasons. First, we are trying to preserve our environment and lessen our carbon footprint by keeping these harmful items out of landfills, and secondly, to raise funds for Friends of Northampton Trails and Greenways.

Both Trailside Realty and Trailside Rentals pride themselves on being environmentally friendly companies by using bicycles to familiarize our real estate customers with neighborhoods and of course our mission to sell and rent properties next to and near hiking and biking trails. Recycling through Cartridges For Kids allows us to take our “Green” concept one step further.

The recyclable items that are collected are returned to Cartridges for Kids® (CFK). Della Penna’s Trailside Realty and Trailside Rentals are among more than 12,500 organizations nationwide that are helping the environment by recycling.

How can you help? You can turn your “trash into our treasure” and feel good about helping the environment all at the same time. Most people have used cell phones to dispose of and almost everyone uses cartridges, either at home or at work. They come from fax machines, copiers and printers. By donating these used items you can assist Trailside Realty and Trailside Rentals with earning much needed funds for the “Friends of Northampton Trails and Greenways”.

Please help us reduce our carbon footprint and help preserve our trails and greenways by bringing these items to the recycling box in our office at 14 Strong Avenue in downtown Northampton
